Trendy Monday: Peanut Butter

I am basing this on absolutely nothing...except for a strange gut feeling. I just think that peanut butter, in all it's gourmet forms, both high and low, has potential as a new "it" food. It's got all the characteristics of one: it's readily available and everybody likes it, but there's tons of room for variation within the category. It's well-known and popular eaten on it's own, or as the central ingredient in something, but it's also a useful supplementary ingredient in a number of other recipes.

I really can't explain why, but I definitely expect to see a lot more artisanal peanut butters pop up soon. Peanut butter for everybody this Christmas!

if this happens, i'll be the happiest girl in the world. the closest I've gotten to gourmet peanut butter has been a peanut butter/marshmallow blend a friend picked up for me in Amish country.
