Last Week's Dinner: Custardy Baked Orzo with Spinach, Bacon & Feta


This is good snow day food. And we are about to have a snow day.

Last Wednesday, I went the breakfast-for-dinner route with Mike Isabella's egg and orzo dish from the February issue of Food and Wine.

It was a) easy, b) interesting, and c) a good balance between hearty and healthy. Yes, it has bacon but is bacon really that bad?

Plus, with 10 ounces of spinach and minimal carbs, I think a little pork fat can be forgiven.
