Grilled Cubanelles

Our garden is starting to produce a lot of vegetables.
Only one tomato so far, but a we've picked bunch of pickling-sized cucumbers
and a ton of cubanelles.

Yesterday afternoon, we put a batch of cubanelles to work.
I stuffed them with a mixture of queso fresco and Monterey Jack,
drizzled them with olive oil, and seasoned them with salt and pepper.
Then Cooper grilled them for just a few minutes and we had a nice little afternoon snack.

They were so easy to make - and a good way to use a bunch of peppers all at once.

Summertime is the best.
