Crappy picture, good dinner.
This Epicurious recipe for pork chops in a cider-dijon sauce, served with
roasted apples, fennel and sweet potatoes, was everything a weeknight meal
should be: easy, quick, cheap, seasonal and solidly delicious.
I was worried that as the recipe was written, there wouldn't be enough sauce.
So I tripled it. Not necessary. I still might double it - the sauce (just cider, mustard and butter)
was very good. But some of ours did go to waste.
That aside, it was pretty much a perfect rainy fall weeknight meal.
