Up at Keuka Lake, this year's trout fishing has been prolific.Alicia's dad, Big G, and her
Uncle Danny (aka "Diddy") have been killing it in the early mornings and evenings.
Last week, while we were up there, Cooper went out with the two of them and
brought home some gorgeous fish. We ate some for breakfast one morning - there's
nothing like a big lake breakfast - and we brought some home with us.
Cooper smoked what we brought home on Tuesday afternoon. On Wednesday, I
shredded some of it and tossed it in a simple green salad. The salad was dressed
in a simple red wine-Dijon vinaigrette and accessorized with goat cheese and bread.
It was light and smoky and great:
Yesterday I shredded a few more of the smoked filets and mixed them with
cream cheese, smoked jalapenos (from the garden), capers, lemon juice, salt
and hot sauce for a simple smoked trout spread:
Some of that will go to work with Cooper and some will go with us to the beach,
where most of our friends won't eat it - but we will!
I still have more trout in the refrigerator. Good problem to have!
