Irish Heritage Month Continued

Corned beef. 

It started out like this: 

And ended up like this:

Because I am a slacker, I bought pre-marinated corned beef from 
Trader Joe's. I did cook it myself, so that's something.

On Saturday, we had corned beef sandwiches with fontina and
 grilled or smoked onions (loosely based on this).

On Sunday, with our enormous pile of leftovers, I made
corned beef hash (using this recipe).

I don't even like corned beef, but the hash was great.

Even better: see that egg in the upper right-hand corner? 
The yolk looks extra bright, right? Well, that's because it was
a double yolk!

Luck of the Irish, baby.
