More on The 2012 Trends

Some additional observations on yesterday's food trend list: Hungary seems to be this year's Peru.
I also see a shift away from everything being painstakingly handmade (and time-consuming), towards more convenient service for the customer. Maybe it's the recession? We're all just tired? Or maybe we're just tired of waiting 15 minutes for that gin and tonic, and we don't really care if the ice was hand-cut.

Because as nice as artisanal smoked ice and small-batch cocktails sound on paper, are they really viable in the real world? Where we all just want a drink?
