Last Night's Dinner: Prolonging the Magic

I was in a seriously wistful mood yesterday. So wistful, in fact, that I went to Eddie's (home of the $8 milk, but the really nice cashiers) for softshells...so I could recreate Sunday night's end-of-summer meal.

Fortunately, a wistful morning turned into a pretty nice dinner. It wasn't terribly complicated - I just dunked the softshells in egg, then in a flour and Old Bay mixture, and sauteed them until they were crispy. We ate them with corn on the cob and farmer's market tomatoes dressed up with mozzarella, basil from the backyard and a little balsamic. Nothing fancy, but it still kind of felt fancy.

Plus, is there anything prettier than multicolored, late summer tomatoes sprinkled with mozzarella and basil?

No, I didn't think so, either.

Nothing fancy, nothing too gourmet but your dinner is what I would call the "ideal" or "perfect" meal.
