Tacos just might be the most perfect food ever invented. They have it all: great, savory, spicy, and creamy, cold taste (if you use sour cream), crunchiness, creaminess, and a million other textures, a spicy, meaty scent that hits you as soon as you walk in the kitchen, minimal prep time, really minimal cost, messy fun at the table, and unsurpassable aesthetics (just look at the condiments!)

But maybe best of all - the reaction when you announce that it's taco night. At lunchtime yesterday, Cooper asked what we were having for dinner. When I said, "tacos," he broke into the same sort of grin he had in my picture of him on Santa's lap - when he was seven. Something about tacos is so pleasing emotionally. For me, tacos are lumped in with spaghetti and meatballs and pizza - other ethnic foods that are now wholely American, and remind me of early dinners cooked to placate the kids on nights my parents were going out.
I recently read something that said that the best food is the kind that reminds you of something else, something from your childhood. Food nostalgia is great when it's on it's own, but when it's combined with the truly fantastic sensory experience that is a taco...what could be more brilliant?
